Eileen's Blackberry Jelly Bakewell Tart
Base
8oz. shortcrust pastry
Filling
2tblspn blackberry jelly (or strawberry jam)
2oz semolina
2oz self raising flour
4oz sugar
1 egg, beaten
¾ tsp almond essence
3oz butter/margarine
Heat oven to 170C/325F.
Grease a sponge tin. Roll out pastry and line the tin.
Spread the jelly or jam over the pastry. Mix together all the Filling ingredients and spread over the jam.
Bake for approx. 30mins until golden
